Everything below is cooked to order. Prices are what you pay at the table and there is no service charge on top. If you want something adjusted, milder, spicier or without a particular masala, tell the counter and the kitchen will do it.
The tandoor is lit before half past seven and the paratha pan goes on with it. This is the breakfast the men from the Sanaiya workshops eat before a shift, and the one families come back for on a Friday morning.
Long grain rice, layered over the masala and left to steam. We cook in batches rather than all at once, so the rice you get at nine in the evening is as good as the rice at one in the afternoon.
Everything on this list goes over charcoal, not gas, and it goes on the coals once you order it. Give the kitchen fifteen to twenty minutes and it will be worth the wait.
Handi is the softer end of the menu. Cooked down in a clay pot so the sauce clings to the meat, and the best thing on the list if you are eating with children.
Cooked to order in the karahi over a high flame. Fresh tomato, no paste, no gravy sitting in a pot from earlier. A half feeds two with naan, a full feeds four.
Mutton takes its time and we do not rush it. The Shinwari, the Charsi and the Peshawari are cooked the Peshawari way, with very little beyond salt, tomato and fat, so the meat has to be right.
Every bread is put on the tandoor wall after you order. None of it is made ahead.
